Tipping etiquette...

Maybe it is the type of service we are looking for that differs. I like European service, especially in Italy where I live now - people enjoy their work and try to give you the best food and drinks, with a story, give you something new to taste, etc.
Asia experience is mostly China, Vietnam, Mongolia, Pakistan, India a bit of Japan, and a bit of Central Asia. I enjoyed India (access to the kitchen when they found out I enjoyed the food and liked to see how it was prepared), and my favorite in terms of service is China and in particular Beijing, and then especially west Beijing. Waiter/waitress behind you take order, genuine happiness when they find out that the foreigner likes the food, always a warning when you are ordering too much, huge smiles when we took my wife's mother to one of our favorite restaurants... Mongolia has nice bars and restaurants with good service although language can be a problem.
I guess I found more enthusiasm and passion for the job in Europe and Asia than in the USA so far. In the new year, I need to go to Georgia (USA), let's see how that goes.
