That's the quote that struck me too.
The thing that clocks provide is a standard rate of play. Before clocks, different people had different ideas about how fast the game should be. Some people thought backgammon should be fast-fast-fast; others liked a more leisurely pace. Neither side was happy with those who took the opposite view. You couldn't say who was right because there was no standard.
And clocks provide an object way to measure the pace of play. Everybody thinks it's the other guy who's slow because when it's your own turn you're busy thinking about your play and don't notice the time go by.
