In addition to what others have said:

The cube is not turned, and by making the bold play you create a position where black would be very wrong to cube on getting the shot, but stands to lose his market by a lot if he hits - thus he gets little value from the cube.

By comparison if you allow him to just escape without a hit, he may get a fairly good double anyway - so you do not actually lose that much from the bold play, and the upside is of course big.
