I don't see the problem, if this is what players like, why not offer them the opportunity? Maybe call it differently to avoid confusion, but keep 'gammon' in it.

I believe that in live backgammon, I may often have played with dice that are not fully proper & random with the proper theoretical dice roll frequency. If you look close enough, that might always be the case.
