If you are playing with a 5 minute time bank and 3 second delay, you should have 5 minutes and 3 seconds before you time out, not 5 minutes. That is regardless of what you have it set to, so if you have only 5 minutes before you time out, then something is set wrong.

Yes, "simple delay" (or just "delay") is actually used far more commonly, in both chess and backgammon tournaments, than Bronstein. Due to indiscretion in terminology among BG players, "Bronstein" has been taken to mean the same thing as "delay", although there is a difference. In terms of total time bank, Bronstein and delay are the same. However, they read differently on the clock, such that Bronstein always shows the total time you have left to play--for example, if you are playing with a 12 second Bronstein delay, and it is your opponent's turn, you can never have less than 13 seconds showing, unless you have already timed out.

You may have to adjust your clock's settings based on mode but delay is perhaps easier to set/understand and more common.
