OT - Ryder Cup?

I agree 100% with your assessment of Sergio's actions. Before reading your comments I was thinking of that this morning, and how Sergio shares with Rose the stigma of high expectations of their youth not completely realized. (Both are still young -- something like 31 and 28 respectively -- but huge pressure was inflicted when each was in his late teens.) The other common thread (this between Furyk and Garcia) is that Sergio has had his own putting woes. He can empathize with Furyk's poor short game display at both 17 and 18.
Regarding the finish of the last match, IMO both Olazabel and Molinari had a shell-shocked look on their faces from the middle of the 18th fairway after Kaymer made the putt that gave Europe 14 points (and at least a tie, plus for sure retention of the Cup). In spite of what the NBC announcer said, there WAS something riding on that last match -- a tie score instead of an outright W/L for the entire event.
Ironically Woods tried to chip in for birdie after Molinari had missed his birdie putt. He needed a birdie for a 2-up win but just a par for a (1-up) match win. The chip was subsequently aggressive and when it missed it went quite a distance past the hole, so far that he was still away. EITHER player at that time could have conceded the opponent's putt. Also, the captains could have conferred and agreed to some kind of settlement, too. I don't think Love and Olazabel had yet reached out to each other -- both likely still trying to reconcile in their minds what had happened over the entire afternoon.
IMO this was more a case of being unsure what to do under the circumstances than a conscious attempt to extract the last ounce of blood. Finally after Woods missed he conceded Molinari's putt, but it seemed like it was more a display of disgust (and punishment) for his own performance (not just the bogey but the 0-3 record in the pair matches on Friday and Saturday) than a gesture of pure sportsmanship.
