The most important reason why a point in the outfield is important is twofold: (1) you don't give your opponent the possibility to flood the outfield with points and checkers, making it difficult to move through the outfield without getting hit and losing ground in the race, and (2) you start working yourself towards that same goal of cutting opp's army into two.
It is not so much the blocking value as the 'control', but that might be what you meant to begin with.
