I agree that a 5% rake would be a crime.

The rake should never be more than 3% (on low stakes matches/money games) and 1,5% max on high stake matches.

It's hard to become much of a favourite in high stakes gammon so if the rake is higher, then most high rollers will lose interest because they realize it's impossible to beat the rake+opponent and expect to earn a decent hourly income.
