This depends to some extent on how aggressively the opponent sends the cube back.
But in general, if your opponent takes too deeply, then you should wait to double until the 'point of last take,' i.e., when your opponent might drop next turn. If your opponent literally never drops then you can wait until the very last roll of the game to double. (Though I suspect that even this opponent would drop when the game is mathematically decided in your favor and it's literally impossible for him to win.)
Getting burned on a double six joker on the very last roll is going to happen sometimes no matter what, so don't conclude too much from that one instance.
