I agree that as far as the legal moves agreement goes, you are under no obligation to point out that your opponent's only legal move saves him from losing a gammon. Your obligation under this agreement begins only when his turn ends, and his turn hasn't ended yet.
However, now we're veering into the land of poor sportsmanship. The only possible course for the game (if it continues) is a non-gammon loss. I would not feel good about accepting a gammon resignation when no gammon is possible. Especially since there is a good chance your opponent misspoke and really intended to resign only a single game.
