When you stop a rollout and want to restart it with different settings you need to clear it. Highlight the plays and hit the 2 ply analysis button again. This will revert it and now the new rollout settings should take effect. If you do as you said, that's just change the settings but not clear the rollout, then GNU will use the old settings.

The same settings you started the rollout with are kept if you stop + save, you're trying to change them.
