Stick, not slotting at gammon go with a 2-1 is not, in my opinion, a reasonable play to have to worry about and know all the responses. As you said, if you are playing a donkey, making the technically correct moves is not necessarily right anyway.
But I do disagree on one point..."It's not something that comes up that often so it's not so important to know by rote." All second roll moves come up very often, assuming the opponent makes the right, or very close to right first roll moves at each score. That's exactly why it is important to know these responses.
I also agree that with a little advance boning up, any top player could prepare for a test or contest and maybe get all or most all right. What surprises me is that there are so many Giants out there, like Falafel, who are otherwise amazing players but haven't taken the time to make sure they get the second and third roll moves right. I guess they feel they are so much better than their opponents on the rest of the game that they don't need to be perfect on the first few moves.
Now, here is a contest I will hold some time, as this will be a true test of the player's thinking, not memory. I will play the first two moves very poorly so you will be in positions you are not used to, and then see if the player can come up with the best third roll move. That would be a real test of logic and skill and would be fun to see.
