Having just played in the Australian Open along with Grant, I concur on the use of clocks in tournaments.
A while back I had the unfortunate experience of playing someone who would take 5 mins for one move followed by another 5 mins over the next move as well, you get the idea. Since this player had done this to me once before and after talking with others who provided similar stories, I believe it was deliberate.
I decided that I would never play this player again without a clock if I could possibly manage it. I purchased a clock and showed my local club my new purchase, the clock I named 'Arthur' for some reason ;-). It so happened that the club patron was interested in how the clock worked and to shorten the story the club ended up purchasing a number of clocks that we now use every club night. We use 2 mins/pt and 12 secs delay. Nobody has lost a club night match on time to date.
For the Australian Open, later rounds were all 2.5 mins/pt and 15 secs delay. My experience was that 15 secs delay was more comfortable than 12 secs and allowed for proper cup shaking and cocked dice better. The 2.5 mins vs 2 mins did not really make a difference to me.
