No change needed, IMO.

All you would be saving would be the extremely rare occasions where hitting 3 checkers is correct by removing the doubles. Also, dont forget that there is a larger amount of skill required to play doubles correctly - as there are more ways to play a double than other rolls. So, you would in fact be removing some of the skill with this change, not the luck.

The stronger players tend to accept the luck factors more than the weaker ones. I personally see no need to change this game in any way.
