To play devil's advocate here...

Swiss tournaments will, IMO, on average lead to stronger players winning, but a lot of people think there's still "too much" luck in Swiss tournaments (this is really a bad way of phrasing it, but whatever).

Best-of-three 7-pointers is equivalent, in terms of "skill", to about a 15-point match. Best-of-three 5-pointers would be equivalent to about a 10-point match. It's not clear to me that you gain in terms of scheduling by going with best-of-three 7-pointers rather than one 15-point match.
