Here's an interesting question: why do chess players generally end a match with a ton of time left over?

Answer: 1) they don't want to risk the possibility of flagging 2) they are saving energy for the rest of the tournament.

1) is less of a concern with Bronstein time controls. 2) is less of a concern for BG players, but both are still something to consider.
