5' tables can only handle two tournament size boards w/o recording

6' tables can handle two boards w/ one recording

8' tables can handle more

continuous tables (multiple smaller tables end-to-end) are easier

but, you are right, recording requires a bit more room -- but becomes more manageable as the tourney progresses and players begin to be eliminated

I've not seen it as a problem yet, but do tend to ask the director when it appears it might be a problem

perhaps it is similar to the practice of many of stacking chairs, directors often have to limit this particularly in the early rounds
