In a triple elimination format, players with two losses could not be in the Last Chance (or Consolation, or whatever you want to call the one "eliminated from Main" flight).

Keep in mind that in Swiss, it is not always possible to pair players with like records, so sometimes they'll have a difference of one. But agreed that a difference of two in records is to be avoided. Also, one of the features of Swiss is that the redraws make sure to avoid two players being paired against each other twice (though they might meet again in the playoffs). I'm not sure if it is in general possible in a predetermined elimination draw to avoid players meeting twice in the earlier rounds. I have to imagine that these imbalances can be kept to a minimum with careful planning, as it should be anyway.

My presumption would be that the winner of the 2-losses flight would need to defeat the winner of the 1-loss flight once, and the winner of that would need to defeat the winner of the undefeated flight once. That is in effect exactly how the Indy Swiss playoffs work, and that is how I think most of us at this point agree that a double-elim event should work, and triple-elim is the same situation.

I think the biggest difference is that there are 8 rounds of Swiss played in a typically 64 player field. This makes it quite possible that nobody will be undefeated, and requires at least 9 matches played to win the event (vs. 7 undefeated in a 64 player triple-elim).

I am still not convinced that the Indy Swiss format is fundementally different from Triple Elimination with Progressive Consolation, or enough so that the advantages of having a pre-set draw sheet to allow matches to begin as soon as the players are available would not outweigh the few minor differences.
