" I have observed opponents making more chicken plays in tournaments than I would expect online. I play on the computer more than I play live. "

Is it the same caliber of players? If not comparisons are not so meaningful.

"And if so, how to combat this pernicious tendency? Is it simply a matter of playing live more often or is there something more subtle going on? "

Do you get flapped? That would include things like worrying about what spectators might think about your play, worrying about the luck of the rolls, worrying about the misplay from the last game, worrying about how much it would suck to lose an overwhelming position (a big difference from worrying about how to not lose it), losing concentration when the opponent has the overwhelming position. All of that distracts from the goal of finding the best play to win the match.
