ABT rules at least are clear on this. If both players agree match is to 17 and the drawsheet says match is to 15, the match winner is the player that reached 15 first, regardless of how many extra games they may have played or who won the longer match. Obviously, it requires that the director becomes aware that the players had played (or are in the process of playing to) to the wrong length and that there is still a record of the score progression. It is the responsibility of the players to check the draw sheet and they assume any penalty from failing to do so. Players may not arbitrarily decide to play to a different match length without prior approval of the director.
