I think if someone were to copy all of the opening rollouts available on this site, put them in a book and sell it, Stick would have a decent copyright case.

I really don't think so. No precedent AFAIK in chess. You can't copyright a section of the game (openings or back games or whatever).

Stick decided which moves to roll out, which bots to use (and when to use more than one), which settings to use (often baffles me), etc.

Maybe baffles you but could be shown to be easily determinable by an expert or by certain criteria. If anyone can reproduce it by a fixed algorithm given enough time it isn't a creative work.
