Commenting on both of these points:
I looked into a "playoff qualifier" method for Swiss. i.e. when you won x number of matches you qualify for the knockout and quit playing in the Swiss, then everyone in the playoff starts at the same level. It is an intriguing method, but I feel it eliminates people too quickly. We would have almost half the field standing around by round 6. It could be useful in a different context, but for weekend tourneys, I think most people would rather be playing.
Regarding the "make-it-up" argument - yes, we have to build the playoffs each time. Given the number of possible outcomes for a tournament of any given size, it is nearly impossible to predict how many people will have each record after round 8. We work very hard to minimize byes when we transition to knock-out, and to seed everyone fairly according to record. Still, I agree that this is the most uncomfortable part of the current format. If you are bothered by this, please read my response to Neil below and register your opinions to that method.
