In a regular DE, you never have an undefeated player playing someone with one loss (except the finals). In a Swiss you can pair people across "loss groups". As a result the Swiss has at most one player with a bye in any given round.
Also, since Swiss pairings are done fresh for each round, you can have more complicated pairing rules about things like preventing players from playing each other twice, who gets the bye, etc. See Bill Minser's detailed expositions on the complexities of the Swiss.
