Another variation would be that the "touch" occurs when the player has not only picked up the piece, but has put it down someplace it could legally go. The move would be binding at that point.
I think the best variation of "touch move" for backgammon is that a move becomes binding once you move a checker to a point it can legally go and release it--take your finger off it. This prevents checker shuffling, it's pretty easy to enforce, and it allows you to straighten checkers on a point without accidentally being committed to a move.
