Using hyperpips to determine winning %

I don't think hyperpipping is useful for the reason that you gave.
I'd probably just try to estimate average winning chances after entering on the first roll, the second roll, and the third roll, multiply by 1/3, 2/9 and 4/27 respectively, and add a percent or so for winning chances in sequences not covered. I'll probably cancel pick and pass against jokers from the bar, that seems OK given the likelihood vs size of the swings. If you plug in 40%, 25%, and 10%, you'd get 40/3 + 50/9 + 40/27 + 1 you get about 21.5%, which looks in the ballpark. That is what I'd do OTB. Might be wrong, I did not try to do a proper analysis of the 40%, 25%, and 10%, but the number would look plausible to me.
