Why always odd?

Two possible reasons:
(1) Odd-length matches play more like money than even-length matches.
(2) Odd-length matches are less likely to be over quickly than even-length matches (compare 8 points vs. 9 points). An odd length tends to even out the distribution of the number of games played.
I don't know how big the effect is, or even if these statements are true. But I suspect this is the perception that led to the tradition of using odd length matches.
