If we stipulated that it is physically impossible to score twice in three minutes then I think it would make no difference whether we go for 1 or 2 (unless for some reason the 2-point conversion gets easier to make later in the game, which seems implausible).
But it is, of course, not impossible to score twice in three minutes, although it is very unlikely (bearing in mind that we just scored and now must kick off). For example, Jim McMahon's BYU team famously beat SMU in the 1980 Holiday Bowl despite trailing 45-25 with 2:33 to play. Going for the 2-point conversion immediately gives you a smidgen of extra equity by revealing whether you will need one score or two.
