"How could it possibly be possible that some of us who have never played football (and earn less than 1% of what some coaches earn) know so much more than they do about some aspects of football strategy?"

Because that is one aspect of the job. They are likely far superior in knowing how to gameplan, run practices, and run a team. But for this one aspect logic is more important than football experience.
