"Secondly, it always strikes me as a bit unfair that the referees 'assist' a team hurrying at the end of a game by doing their jobs in placing the ball, etc. in a hurry as well. It seems they should do their jobs at the same speed throughout the game. If a sweep is run and the tackle is made near the sideline, the referee should not run the ball back to the hash marks at the end of the game if he didn't run the ball back to the hash marks during the remainder of the game."

It is indeed fair if that is the standard procedure and would have been done for either team. Note that there are other rules differences regarding timing near the end of a game.
