I was a bit concerned with the possible font issues if people are sharing files between Excel 2010 and 2007 and different OS's.
The simple rule is this, if you are targeting potential Excel users on XP (Whether they use Office 2007 or 2010) you should consider setting any fields that you know will require Nactation to use the "Arial Unicode MS" font.
I have found that on Vista and Windows 7, most of the fonts (whether you use Excel 2007 and 2010) already support Unicode. Excel 2007 AND 2010 running on Win7 and Vista work the same (And as documented by Ian). If you run those same versions of Excel on XP you will soon discover that the only font that seems to have Unicode support (with combined diacritical characters) is the Arial Unicode MS one.
Using Arial Unicode MS by default on Excel 2007 or 2010 spreadsheets should allow the greatest interoperability when sharing spreadsheets.
