Streaming Live Video

Regarding the video camera, if it is a DV Recorder with firewire you'd probably be able to hook it up to a firewire enabled PC (you can by a firewire card if your PC doesn't have such a port). There is software that take such video input (real time) and make it appear as a high resolution webcam (with audio). Because it appears to most software as a webcam it can be streamed like any other webcam input.
As for services I can think of the most common ustream.tv, justin.tv, and stickam . The problem with choppy steaming can often be a function of the receivers ISP, and any latency between them and the streaming service you use. And of course you'll need a good internet connection between you and the streaming service servers. Of course the amount of bandwidth that the streaming services have is key as well. I have personally used justin.tv and ustream.tv . If you can reduce the resolution of your video that can reduce bandwidth and can improve the streaming quality.
I'm not sure you will find anywhere that is perfect.
