Is it possible to play with a clock and two sets of dice?

IMHO you should not allow this.

It's not the rule, there's no good reason to allow it and it would be an annoyance to all their opponents.

The "flow" (I think) is even better, playing a clocked match with one pair of dice. I suspect that these "old-schoolers" would play perfectly fine after a game or two, if they give it a chance.

Some points to consider, arguing for one pair of dice:

When would they pick up their dice?
- Before hitting the clock / before the opponent roll -> Then they should be at a big disadvantage, if a dispute arise about what was rolled!
- After the opponent roll -> Then their hands will be on the board during the opponents turn, while they move their checkers - I think only one player at a time should touch anything on the board.
- Or before rolling / after opponents turn -> That would leave two pairs of dice on the table at all times, it just feels so wrong!

Would they shake their dice while it's the opponents turn? Maybe not routinely, but only when they have just doubled!! :-)

Why wouldn't you want to share the same dice as your opponent BTW? Planning on getting the luckier pair somehow during the game?

How would you handle premature rolls? Like premature action in the non-clocked rules? Or like picking up early in the clock rules?

It's a slippery slope to enter. Will the next player ask to roll without cups - because it's just a matter of that tangible feeling? Will a lefty ask the TD to allow him all-tournament LHS rolling privilege? (a MUCH MORE reasonable question).

You have the rules - play by them. Unless there's a compelling reason to grant any exception, then don't do it.
