+250 means it pays 2.5::1 (2.5 TO 1) so you get 350 back (250 profit) for a 100 unit risk. Don't give the house any more juice than they are already squeezing.

These are 'to' odds, not 'for' odds. (Be careful at the craps table because in US they mix and match 'to' odds and 'for' odds, as you'll see from reading the felt.)

-350 means you risk 350 to gain 100 (and once you give them your 350, if you win you get 450 back). Dividing by 350 (if you want to just risk 100) corresponds to earning a profit of 100/350 for every unit of risk, so that does round down (house ALWAYS keeps the change :) to 28 units, as you say. I guess you're accustomed to betting the fav?
