Why isn't backgammon played for table stakes?

If you're playing for $5/point but with a cap of $20 you can imagine that when you get cubed to 2 ($10) you ignore taking backgammons into account. When you recube to 4 you will be killing both your and your opponent's gammons. It is much like match play in some respects.
