Why isn't backgammon played for table stakes?

Your example, $5/point with a $20 limit sounds different from the way we play.

In our setup, each player starts with the same number of chips. After each game, the loser pays the winner the stakes. There is no limit other than the number of chips you hold. When you run out of chips, you lose (like in Poker).

This the approach I was intrigued by, which seems like a viable alternative to straight money or match play and would bring in some nice complexities.
