Why isn't backgammon played for table stakes?

A chouette tournament is basically a table stakes game, or certainly can be structured that way. I think table stakes would be a great way to play, adding interesting elements to the game that will greatly affect the use of the doubling cube and cube strategy.
Another excellent, obvious plus of this approach is that you know, in front, your potential loss.
One problem with table stakes is that you don't know how long the session will last, but you can overcome that problem by simply setting a period of time that the session will end and then settling up based on the difference in chips.
This post has inspired me. I think it would be really fun to have a table stakes chouette tournament where everyone starts out with the same number of chips; people rotate where they play so that everyone gets to play with everyone else, either heads up and in small chouettes, rotating say, every half hour, and then cashing in at the end to determine who wins (or loses) what.
If I can find enough people interested in doing this, I will set up a tournament-- probably a $100 buy in to make it interesting and nobody can lose more than $100 but the winner could win $1000.00 or more depending on the number of entrants. Sounds like a fun afternoon or evening.
