Danish TV2 sports very often show odds and discuss these as tournaments go along, wheather that being Football World Championship, Tour de France, Wimbledon, etc. They sometimes pick the bets they like the most, and have the different commentators compete in who picks the best bets during the tournament.
I'm not sure it adds that much useful information. We can all look up odds at our favorite bookie? And as someone else wrote, the odds is not solely a function of winning probability, but also betting expectations.
Change of topic: Tennis tournaments are seeded, i.e., the players are distributed in the draw to ensure that the best do not face each other in the early rounds. Should backgammon tournaments be seeded, assuming that seeded players have no greater chance of getting a bye than non-seeded players?
In DBgF we do use seeding in a few tournaments (individual: Danish Championship, and team: the national Cup tournament - to name two). It works great in such tournaments (where the title/trophy is what's at stake), but I wouldn't recommend it in tournaments where the price money is the main or sole object (because it favors the better player and thus can drive the fish away).
We have also used seeding in some Swiss style (Monrad) tournaments (individual and pairs) where rating is used to break ties (in Swiss style tournaments), and to pair up players for the first round.
But before you start seeding you need a good objective measure of strength IMHO. The Danish rating system is such, the USBGF one probably need some more data before it's useable.
Another scenario where you can use seeding, is for the finals (cup style) of a big tournament where people have come in from qualifiers, in a format that allowed different performances to qualify. Ie. you play Swiss style qualifier - or Master Points qualification tournaments, then when playing the final 16 / final 8 / whatever, it makes good sense to seed according to qualification score.
