I do like the optional pools system, since it does allow players to have much more control over their effective entry fees. Given the wide disparity of income levels of tournament goers, I think it is the way to go. It just has the disadvantage of lower certainty of bigger prize pools for the high rollers in cases where the optional pools might sometimes be disappointingly low for those higher rollers, but it's a decent middle way.

As for the tipping issue, I live in the UK, and until I read your post, I had no idea that it is normal for US winning players to tip the staff. We don't have a tipping culture over here like you obviously do over the pond. Maybe it's just outside my own experience due to my pretty much not actually winning jack $ at tournaments lol.
