I meant to emphasize that the NEBC routine is very wait-staff friendly. The worst scenario for staff is a large number of patrons who stay for hours, order little, want separate checks and leave miserly tips. Having all orders on one tab, we shift the burden of 'keeping track' of everyone off the back of the staff, and ensure they are generously tipped own the full amount that was purchased.

We're pretty much on the honor system for people paying us for their food and underpayment for refreshments has not been a problem (speaks well of our membership) - obviously if the club finds it's 'short' at the end of the night, you'd have to employ a more deliberate system of tracking purchases.
