There are rules and there are the standards that are set by the players. In my opinion, if you don't nicely remind your opponent that he is fast-grabbing when it first happens, or after one or two times, then "ethically" you've given up your rights to call it on him later.
This applies even more to the fast-roll rule. The game gets into a flow where both players are fast-rolling and then, at a critical time, your opponent rolls a 6-6 to win and you say he fast rolled and must roll over. According to the rules, you are correct, but what you have really done is taken an unfair shot.
Now, you certainly are not required to warn your opponent about any rule violation--you could simply invoke the rule the first time it happens, but unless it is a blatant violation, that seems harsh relative to quick rolling or fast grabbing. But either way, if you let your opponent get away with it, then I think you have no (ethical) leg to stand on when it happens later.
This, by the way, is one of the many things I believe needs to be written into the rules or into a guideline for application of the rules.
(Another, concept that I believe should be either in the rules or a guideline for directors making a ruling is that when there is a dispute or doubt about what happened or interpretation of what happened, the ruling should tend to go against the party that initiated the questionable action.)
