This book is co-authored by Tami Jones.
The position you post from the book has no score and nowhere in the book did I find mention of score (or $-game). Sometimes the cube is on one side or the other and sometimes it is centered. In the intro it says:
I (Tami) analyzed the matches using Snowie. (emphasis mine.)
Again, there is a scarcity of detail as to what the settings of the analysis were. Maybe the positions were analyzed from matches and the score affected the cube location. Maybe the analysis was performed cubeless.
Careful editing may have changed this diagram (e.g. putting the cube on White's side). But I think people need to keep in mind that the intent is to teach a single concept for each position and sometimes pedagogic license allows the authors leeway.
And, BTW, there is more commentary than simply "this is a race". In fact there is a page worth of discussion (back-and-forth) between Tami and Kit. (I don't feel the need to type the full page.) This is a book for intermediates and that is stated on the back cover. As such it seems the authors' intent was to drive home a single principle from each position rather than go into details that might interest higher level players (and in fact that is even stated on the back cover as well).
