My understanding of what Jake was saying is that the cheat would ostensibly agree to using your equipment. However, he would then secretly manage to swap "your" dice (meaning the dice owned by you and provided by you) for his loaded dice.

If you provided two sets of dice then obviously it would be easier for the cheat to swap out the pair of dice that you provided for him to roll. However, I'm sure a clever cheat could find a way to exchange the dice you were rolling as well. He would just have to wait for the right moment, e.g., between games when you weren't watching the dice, or when you clumsily rolled the dice so that they flew off the board.
