From my experience, 2 hours is about the typical window for 9-11 point matches. Six matches plus a dinner break: 7 x 2 hrs = 14 hours.

One thing that clocks WON'T regulate is time between matches. Except the INDY Swiss movement where Butch scheduled the rounds (some 2:30, some 2:15), I don't ever remember a tournament where the match start times could be determined other than at the beginning of a session.
