how do I even know for absolute fact that my opponent, who produces his tablet for use in our match is actually using the legitimate product as opposed to a 'faked' version that apes the original in all apparent ways but is actually a doppelganger whose results he is able to manipulate in some way?

If a standard random number generator is used, and each player supplies half of the initial key (hidden to his opponent), then after the match the app could reveal the full key to both players and they could verify for themselves that the app produced the one and only set of rolls possible for that key.
