What about, if you have time when the main tournament is not being played, you can pair each of the novices up with another player (high intermediate or open level) and have them play some doubles matches. It doesn't need to be a tournament. Just play some matches. Have the novice be the final say on all moves. Maybe they're allowed to ask their partner for their advise a certain # of times in a game...like a phone-a-friend option. Then their partner can discuss with them after the play what they did right or wrong, and what their game plan should be. You'll need to find some volunteers with some patience though. It would need to be treated more as a training session rather than a real competitive match.
