Also relevant is that if you are not hit the follow up position is much better after the bold play:

After the doubles the safe play leaves the coup classique position and the bold play makes him run if he can.

If you safely take two off then having 2 on each of 2 and 3 is better than 5 on the two point. Note that he would wanted to run a checker off already (even should do so when got down to 6 checkers) so the two blot possibility is not really a concern.
