What difference is there in randomness?

I would say approximately zero -- it's all about perception.

But perception is important too. As a player, you have some obligation to shake to dice enough that your opponent can feel comfortable he is getting a fair roll from you. So how far do you need to go? Is three shakes enough? four, five? It depends on your opponent. On the other hand, at a certain point you're just slowing the game down, so you have to find a compromise.

The USBGF rules give two shakes as the norm. That sounds perfectly reasonable to me.
