"What should happen..." is that whenever you leave the table you should write down the time of both players on the scoresheet. With some clocks (like the GT-II) there is a way to save the current values in memory, but sometimes that is dicey if you mispunch when you get back while trying to recall it.

I didn't answer your question, though. I doubt there is a pat answer (in the US) but maybe this has come up often enough (e.g. in Europe) that there is a precedent. Here I think director has some improvising to do. Rather than speculate (or improvise myself) I'll defer this one.
