On the (US) PGA tour, I'm pretty sure the official scorecard is kept by the opponent, but after the round the player himself must sign and turn in that scorecard. So the player keeps his own score as well as (one of) his opponent's scores and then they shift scorecards at the end of the round.
But bottom line, as you indicate, is that if you sign an incorrect scorecard, you are DQ'ed. Many (most) players have their caddies hang onto the scorecards between scoring recordings, and (presumably) ask the caddie to doublecheck. We have no caddies to help us in backgammon.
