If you finish earlier at night, people can have their pool dip earlier during the day and start their matches earlier the next day, finish earlier at night, etc.

There is not a huge difference between 3 pm and 1 pm to start playing long matches, but a huge difference in starting at 11 pm or past midnight for long matches.

Breakfast, pool, maybe a snack and starting at, let´s say 1.30 pm is not harmful but might accommodate a few more players.

2,5 hours is something needed in south of france for a decent dinner, but that´s also due to the fact that 8 pm is the usual popular dinner time there, restaurants are packed and service is a bit slower. If you schedule dinner to start 7 or 7.30 pm, your chances are better to finish you dinner earlier and maybe not need 2,5 hours, but shorter.
